This is my favorite way to make bacon on the weekends, when it’s more than just a slice or two. This is so delicious that my kids have even turned down bacon when they discovered it wasn’t “oven bacon.” I saw Ina Garten do this while watching one of her Barefoot Contessa shows and have been making bacon this way ever since. Her original recipe includes a slathering of maple syrup on top – yum! Not only is it a way of producing crisp, flat bacon, but you can cook several different types of bacon at one time (I eat turkey bacon), without co-mingling the flavors. If you are having a crowd, particularly, you can’t beat this.
however much bacon you can squeeze onto the roasting rack

- Set rack into roasting pan and lay bacon atop rack.
- Roast for 25-30 minutes and then press bacon between paper towels and you’re done! Perfect bacon with no turning necessary.
