This is so easy, it almost doesn’t count as cooking… This would be wonderful with Heather’s Salad as a side.

4 15-oz. cans organic black beans
1 c. water
1 tsp. salt
3/4 c. Essential Roasted Salsa, or your favorite canned salsa (omit for nightshade allergy)
chopped cilantro for garnish
lime wedges
- Empty beans into fine mesh colander and drain until the water runs clear.
- Bring first four ingredients to a boil in a heavy saucepan and simmer gently for 15 minutes.
- Puree soup with immersion blender for 15-30 seconds until soup is still slightly chunky.
- Serve ladled into bowls, garnished with cilantro and lime wedges.
