chocolate puffed rice treats

A classic American treat that is almost always gluten and dairy free! You can use traditional marshmallows or get the more health conscious variety at your local co-op or Whole Foods. My son’s 8th birthday party is tomorrow and this is a “normal” treat that he knows his friends wil love. You can use the traditional ingredients, but I always opt for an all natural, organic list of ingredients that isn’t several inches long. Taken from the original recipe, this is a perfect sticky treat.

Prep time: 10 minutes
Total time: 1 hour, 10 minutes
Yield: 12 small treats

3 T butter or butter substitute (Earth Balance)
about 40 traditionally sized marshmallows (10 oz.)
6 c. puffed chocolate rice cereal (EnviroKids Koala Crisp) or plain puffed rice cereal (Barbara’s Organic Puffed Rice)

  1. Grease an 8×10″ glass casserole pan with butter or butter substitute.
  2. In a large pot, melt butter on medium heat then add marshmallows, stirring until melted and smooth, about 3-4 minutes. Keep the heat on a steady medium low to keep the mixture from burning.
  3. When the marshmallow mixture is smooth, fold in puffed rice cereal with spatula until all cereal is well coated.
  4. Press mixture into casserole pan and smooth top with spatula. Cover and refrigerate for up to two days.
