
A classic American treat that is almost always gluten and dairy free! You can use traditional marshmallows or get the more health conscious variety at your local co-op or Whole Foods. My son’s 8th birthday party is tomorrow and this is a “normal” treat that he knows his friends wil love. You can use the traditional ingredients, but I always opt for an all natural, organic list of ingredients that isn’t several inches long. Taken from the original recipe, this is a perfect sticky treat.

Yield: 12 small treats
3 T butter or butter substitute (Earth Balance)
about 40 traditionally sized marshmallows (10 oz.)
6 c. puffed chocolate rice cereal (EnviroKids Koala Crisp) or plain puffed rice cereal (Barbara’s Organic Puffed Rice)
- Grease an 8×10″ glass casserole pan with butter or butter substitute.
- In a large pot, melt butter on medium heat then add marshmallows, stirring until melted and smooth, about 3-4 minutes. Keep the heat on a steady medium low to keep the mixture from burning.
- When the marshmallow mixture is smooth, fold in puffed rice cereal with spatula until all cereal is well coated.
- Press mixture into casserole pan and smooth top with spatula. Cover and refrigerate for up to two days.
