chocolate chip muffins

Amys Gluten Free Pantry

Using Pamela’s mix makes these muffins a snap. Remember, there’s a small amount of milk in these.

Prep time: 15 minutes
Total time: 35 minutes
Yield: 12 muffins

2 1/2 c. Pamela’s Baking & Pancake Mix
1/2 c. water
1/2 c. sugar
2 large eggs
2 tsp. gluten-free vanilla
1 1/2 c. semi-sweet chocolate chips (Trader Joe’s are GFCF; Enjoy Life is GFCFSF)
sprinkle of powdered sugar

  1. Preheat oven to 350 degrees. Mix all muffin ingredients together and spoon into greased muffin pan, 2/3 full. (An old fashioned ice cream scooper works great and creates uniformity).
  2. Bake for 18-20 minutes. Cool and sprinkle with powdered sugar. Also great as mini muffins.

    I am nightshade sensitive as well as being gluten sensitive. I pulled up a recipe that is tagged as ‘no-nightshade’, but it lists Pamela’s Baking and Pancake mix as the main ingredient. I checked and found that this product contains potato starch, and that qualifies as having solanine, Just wanted to post so that other’s are aware to keep checking labels, even when it’s something from a recipe : )

    Nightshades ‚Äď Avoid in order to decrease inflammation:

    Potatoes, all varieties (sweet potatoes and yams are NOT nightshades. Beware of potato starch used in many seasonings and as a thickening agent)
    Peppers (red, green, yellow, orange, jalapeno, chili, cayenne, pimento)
    Tomatoes, all varieties (including Tomatillos)
