I usually make a double recipe of Basmati rice so that I always have extra for just this type of recipe.
Prep time: 5 minutes
Total time: 20 minutes
Yield: Serves 4-6 as a side.
1 c. Basmati rice
1 1/2 c. water
1 tsp. olive oil
1/4 c. Essential Roasted Salsa or your favorite salsa
salt to taste
- Place rice and water into a small saucepan and bring to a boil. Once boil is achieved, reduce to lowest simmer for 12-15 minutes.
- In large skillet, heat olive until until hot. Add cooked rice, salsa and salt and mix until well combined. Serve with cilantro and lime if you like.
