I obviously have a love affair with cilantro. I think people either like it or don’t. If it’s not your cup of tea, use Italian parsley or basil instead.

Prep time: 5 minutes
Total time: 20 minutes
Yield: Serves 4 as a side

1 c. white Basmati rice
1 1/2 c. water
1 T olive oil
1 tsp. salt
1/2 recipe (about 1/4 c.)
Cilantro Pesto
zest of 1 lemon

  1. Combine  water with Basmati rice in small spot, covered over high heat. When water begins to boil, turn the heat to lowest setting and simmer, covered, for 12-15 minutes. Remove from heat and let rice sit for 5 more minutes.
  2. Over medium high heat, heat olive oil until hot. Add rice, salt and Cilantro Pesto, stirring until well combined.
  3. Transfer rice to serving bowl and add lemon zest, stirring until combined.
