Udi’s bread makes this comfort food possible. If you want a change from bread, my kids love dipping rice crackers into the egg salad, too.

Yield: 2 sandwiches
3 hard boild eggs
2 T mayonnaise (Best Foods is GFCF, but not soy-free)
salt & pepper to taste
4 slices gluten-free bread (I use Udi’s)
baby carrots
salty almonds
fresh fruit such as grapes and blueberries
- Mash eggs with mayonnaise. Season with salt and pepper.
Makes 2 sandwiches.
