1 recipe Cilantro Pesto
- Coat thighs with cilantro pesto and marinate for several hours or overnight.
- Grill on high heat for 5 minutes. Turn heat down to medium and grill for another 5 minutes. Turn and grill for additional 10 minutes. (If you are grilling chicken, it’s about 7 minutes per side). Save the remaining pesto and mix into white basmati rice for Green and Yellow Rice, which is a nice accompaniment.
