I honestly have no idea who named this, but my brothers and sisters and I grew up on it. Even though I can’t partake, I love making it because the smell brings me back to my mom’s kitchen. Great for a potluck.

Yield: Serves 8-10
3 15 oz. cans gluten-free chili (I use Stagg’s Original)
1 bag regular sized Fritos
3-4 c. shredded Cheddar Cheese or Daiya Vegan cheese alternative
- Preheat oven to 350 degrees.
- In an 8 1/2 x 11″ casserole dish, spread Fritos to cover the bottom.
- Spoon chili on top of Fritos.
- Cover with cheese and bake for 30 minutes.
This is my absolute favorite meal of all time. This is a meal to wear I have fourths!
Can’t believe I waited so long to try and make this dish. It so easy and great for a night you just don’t feel like putting a lot of effort into a meal. Delicious and easy!
