I don’t know about you, but I’m always looking for ways to make food stretch at my house. At any given time, I have between two (the ones I’ve got), and eight kids at my house. An easy dessert is a brownie parfait. This is so easy, I’m not even including quantities.
Great for the 4th of July, it’ll serve a crowd. If you are toting your food to see fireworks, this works well too, because you don’t have to keep the ice cream frozen.

gluten-free brownie mix (I love Trader Joe’s GFCF offering)
coconut ice cream, melted, any flavor you like, homemade or store bought
fresh blueberries
fresh strawberries sliced in fourths
- Bake brownies according to instructions. Cool.
- Into parfait cups or plastic cups for kids, layer berries, coconut ice cream and a sprinkling of crumbled brownies. Do as many layers as you like, ending with a sprinkling of brownie crumbs.
