This is a really nice combination of flavors that, for me, epitomize Greek food – garlic, lemon, fresh oregano… I love this on a typical Greek salad, piled high with lots of vegetables, which is the perfect foundation for leftover Chicken Souvlaki.

You can easily double this if you want to make sure you always have good dressing on hand. One of the way people with food intolerances get into trouble, is when the right choices aren’t convenient. I like to keep this in a jar in the fridge so that I can use it at a moment’s notice.

Total time: 5 minutes
Yield: 1 cup
Special equipment: mini food processor or blender

1/2 c. olive oil
1/4 c. red wine vinegar
1/4 c. fresh lemon juice
(juice of 1 lemon)
1 T fresh oregano (or 1 tsp. dried)
1 clove garlic
, sliced in quarters
1/4 tsp. salt
1/4 tsp. freshly ground pepper

  1. Place all ingredients into mini food processor or into blender bowl and blend until smooth – about 20 seconds. Serve atop a Greek Salad or any mixed greens.

    I LOVE this dressing! I had it on a greek salad and then I drizzled some over steamed artichokes….DELICIOUS!!
