This is my family’s favorite breakfast. It really need no accompaniment except a good cup of coffee.

1 15 oz. can organic black beans, rinsed until water run clear
2 T water
1/2 tsp. salt
1 c. Essential Roasted Salsa or salsa of your choice, divided
4 eggs
butter or olive oil for frying eggs
1 avocado, peeled and sliced
1/4 c. chopped cilantro
- In a small saucepan, heat black beans with water and 1/2 c. of salsa. Bring to a simmer.
- Fry 4 eggs, cooking until desired doneness, flipping over at last moment to create over easy eggs.
- While eggs are cooking, spoon half the beans onto two plates, followed by two eggs per plate.
- Pour remaining salsa into the saute pan used for eggs and heat until just warm. Spoon salsa over eggs, distributing avocado and cilantro on top and serve.
