This is my weekday go-to rice. It’s light and fresh and pairs well with chicken and beef.

Total time: 20 minutes
Yield: 6 servings
2 c. white Basmati rice
2 1/2 c. water
juice of 1 lime
1 bunch chopped cilantro
1 tsp. salt
- In a medium saucepan, add rice and water and cover.
- Bring to a boil and reduce to a simmer. Cook covered for 12–15 minutes.
- Remove lid and fluff with a fork. Place rice into serving dish and add juice.
- After rice has cooled a moment, mix in cilantro and serve. Serves 6–8 as a side.
