Amys Gluten Free Pantry

Often times, modified food starch (code name “gluten”) is added to many commercial mayonnaises. It helps give the mayonnaise body and stiffness. Coleslaw is one of those things we are accustomed to buying at the deli counter, but you’ll be surprised at how easy it is to make yourself. Plus, you’ll know what’s in it! This is great alongside Pulled Pork Sandwiches and it’s surprisingly good in Fish Tacos. You’re greatest tool for this recipe is a nice, sharp knife.

Prep time: 15 minutes
Total time: 15 minutes
Yield: about 6 cups or 8-10 servings

1/2 head shredded cabbage (about 8 cups cut very thinly)
1 medium yellow onion, finely diced
1/2 carrot, grated
2/3 c. mayonnaise (Best Foods is GFCF but contains soy)
3 T apple cider vinegar
1/2 tsp. celery seed
1/4 tsp. salt

  1. Thoroughly mix all ingredients together. Can serve immediately or refrigerate for a few hours.
