broccoli bacon salad

This is for my friend Brad who is trying to sneak more vegetables into his kid’s diet. Not only is this delicious, but the veggies are raw – another nutritional bonus.

Prep Time: 10 minutes
Yield: Serves 4-6

12 oz. raw broccoli florets (tips) from about 3 big heads
4 slices cooked bacon (can substitute with turkey bacon)
1/2 medium red onion, finely chopped
1/2 c. dried currants or raisins
1/2 c.
mayonnaise (Best Foods is GFCF, but not soy-free)
2 T white or cider vinegar
2 tsp. agave syrup
(or 1 tsp. sugar)
salt to taste

  1. While bacon is cooking, cut florets into small, bite-sized pieces and add to serving dish.
  2. Add onion, currants or raisins, and crumbled bacon to broccoli.
  3. Whisk mayonnaise, vinegar and agave together with a fork or whisk and pour on top of broccoli.
  4. Mix well and add a pinch of salt to taste.
    This holds up great the next day, too.
