broccoli bacon salad

This is for my friend Brad who is try­ing to sneak more veg­eta­bles into his kid’s diet. Not only is this deli­cious, but the veg­gies are raw – another nutri­tional bonus.

Prep Time: 10 min­utes
Yield: Serves 4–6

12 oz. raw broc­coli flo­rets (tips) from about 3 big heads
4 slices cooked bacon (can sub­sti­tute with turkey bacon)
1/2 medium red onion, finely chopped
1/2 c. dried cur­rants or raisins
1/2 c.
may­on­naise (Best Foods is GFCF, but not soy-free)
2 T white or cider vine­gar
2 tsp. agave syrup
(or 1 tsp. sugar)
salt to taste

  1. While bacon is cook­ing, cut flo­rets into small, bite-sized pieces and add to serv­ing dish.
  2. Add onion, cur­rants or raisins, and crum­bled bacon to broccoli.
  3. Whisk may­on­naise, vine­gar and agave together with a fork or whisk and pour on top of broccoli.
  4. Mix well and add a pinch of salt to taste.
    This holds up great the next day, too.
