creamy avocado dressing

When you have to give up dairy, you feel as though you no longer get to experience that luxurious texture we all love. Avocado is the perfect ingredient to give you creaminess without the cream.

Total time: 5 minutes
Yield: scant 3/4 cup
Special equipment: mini-food processor (below) or blender

1 medium avocado
4 T water
4 T fresh lemon juice
(juice of approx. 1 lemon)
3 T grapeseed oil
2 T fresh cilantro
1 T olive oil
1/2 tsp. salt
freshly ground pepper

  1. In the blender bowl of an immersion blender, (or in a blender) mix all ingredients and blend until smooth.

If dressing is too thick, thin with more water and lemon juice.
