sweet potato hash

Yield: Serves 4-6 as a side

Sweet potatoes are one my favorite vegetables and often overlooked in favor of white potatoes. This is great as a breakfast side or with dinner. Remember, sweet potatoes have the lighter skin and flesh. The yam is darker. But if you have yams, they work great here, too.

2 T olive oil
2 medium sweet potatoes
, cut into bite-sized pieces
1 yellow or white onion, cut into bite-sized pieces
1 tsp. salt
1 tsp. ground cumin
1/2 tsp. garlic powder

  1. Heat olive oil in skillet until hot. Add potatoes and onions and turn to medium heat.
  2. Stir frequently as they will brown quickly. Add salt and cumin.
  3. Continue to cook for about 15 minutes until well browned and soft to the bite.
