speedy black bean soup

This is so easy, it almost doesn’t count as cooking… This would be wonderful with Heather’s Salad as a side.

Prep time: 5 minutes
Total time: 10 minutes
Yield: Serves 6

4 15-oz. cans organic black beans
1 c. water
1 tsp. salt
3/4 c.
Essential Roasted Salsa, or your favorite canned salsa (omit for nightshade allergy)
chopped cilantro for garnish
lime wedges

  1. Empty beans into fine mesh colander and drain until the water runs clear.
  2. Bring first four ingredients to a boil in a heavy saucepan and simmer gently for 15 minutes.
  3. Puree soup with immersion blender for 15-30 seconds until soup is still slightly chunky.
  4. Serve ladled into bowls, garnished with cilantro and lime wedges.
