Full of oats, puffed rice, chocolate and cinnamon, these bars are great not only because they’re tasty, but because you can control the size. My kids rarely finish one of those nutrition bars on their own. Last week, while in Whole Foods, the kids got a free gluten-free sample of the Nu-Go bars, which they love. But at $1.79 a pop, I figured I had to learn to come up with something myself. I got the thumbs up from both kids and tucked a 1″x2″ bar into their lunch today.

Have fun with this and make the recipe your own. You could add cranberries, chopped dates, raisins or marshmallows… whatever your kids like. I think orange juice with the chocolate would be great. And when you don’t have time to make your own, Nu-Go is a great alternative.

Total time: 1 hour
Yield: 12 small bars

1/4 c. (half a stick) butter or butter substitute (I like Earth’s Balance)
1/4 c. grapeseed oil (or vegetable oil)
1 1/2 c. rolled oats (I use organic quick oats)
1 1/2 c. puffed rice (you can buy at a health food store)
4 oz semi-sweet chocolate chips (Trader Joe’s brand is GFCF, Enjoy Life brand is GFCFSF)
1/4 c. agave syrup
1 teaspoon cinnamon
pinch of salt

  1. Oil an 8×8 glass pan.
  2. In a large saucepan, add butter and grapeseed oil. Melt over low heat and add all remaining ingredients.
  3. Stir until chocolate is completely melted and remove from heat.
  4. Pour entire mixture into glass pan and press flat and uniform with spatula.
  5. Refrigerate for one hour, then cut into 12 small bars.
    Store these in an airtight container in the fridge.
