Using Pamela’s mix makes these muffins a snap. Remember, there’s a small amount of milk in these.

2 1/2 c. Pamela’s Baking & Pancake Mix
1/2 c. water
1/2 c. sugar
2 large eggs
2 tsp. gluten-free vanilla (non-alcoholic)
1 1/2 c. semi-sweet chocolate chips (Trader Joe’s are GFCF; Enjoy Life is GFCFSF)
sprinkle of powdered sugar
- Preheat oven to 350 degrees. Mix all muffin ingredients together and spoon into greased muffin pan, 2/3 full. (An old fashioned ice cream scooper works great and creates uniformity).
- Bake for 18-20 minutes. Cool and sprinkle with powdered sugar. Also great as mini muffins.
