I obviously have a love affair with cilantro. I think people either like it or don’t. If it’s not your cup of tea, use Italian parsley or basil instead.

Yield: Serves 4 as a side
1 c. white Basmati rice
1 1/2 c. water
1 T olive oil
1 tsp. salt
1/2 recipe (about 1/4 c.) Cilantro Pesto
zest of 1 lemon
- Combine water with Basmati rice in small spot, covered over high heat. When water begins to boil, turn the heat to lowest setting and simmer, covered, for 12-15 minutes. Remove from heat and let rice sit for 5 more minutes.
- Over medium high heat, heat olive oil until hot. Add rice, salt and Cilantro Pesto, stirring until well combined.
- Transfer rice to serving bowl and add lemon zest, stirring until combined.
