Amys Gluten Free Pantry

A nice change from a green salad, this is a typical Hungarian side, without the sour cream. It’s light and fresh and keeps for another day. My kids love this (even the raw onion part).

Prep time: 5 minutes
Total time: 10 minutes
Yield: Serves 4 as a side
Special equipment: box or hand grater

1 English cucumber, skin removed, grated on a diagonal on the slit side of your box grater
1/4 yellow onion, sliced as thin as possible
1 T rice wine vinegar
1/4 tsp. dried dill
pinch of salt

  1. Place all ingredients into a bowl and mix thoroughly. Serve in ramekins to contain drips.
