You can throw this into your crock pot before you leave for work and it will be ready 8-9 hours later. Or if you are away from the house longer than 9 hours, start this in the evening, (8-9 hours prior to waking up). Once you get up, pull the meat from the crock pot, shred it with forks (which takes less than 5 minutes), then take your shower and get ready for work. By the time you’re dressed, the meat will be cool and you can put it in the fridge for dinner that night.

This recipe calls for about half the meat produced from a 3-lb boneless loin. Use the other half for Carnitas Tacos, with Mexican Herbed Rice and black beans.

Prep time: 15 minutes
Total time: 9 hours and 15 minutes (if you haven’t already cooked the pork)
Yield: 4 sandwiches
Special equipment: slow cooker (crock pot)

For pork:

1 3-lb boneless pork loin
1/4 c. water

  1. Put all ingredients into crock pot on low. Cook for 8-9 hours until fork tender. Remove and shred with forks and set aside.

For sandwiches:

2 c. pulled pork
1/2 – 3/4 c. BBQ Sauce
(the Kansas City BBQ Sauce from Trader Joe’s is GFCF)
8 slices toasted GFCF Bread (I use Udi’s)

  1. Add both ingredients to a skillet over medium heat. Cook until heated through, about 5 minutes.
  2. Pile pork in between toasted bread and serve with a little ramekin of extra BBQ sauce. Tastes great with coleslaw and BBQ Beans (also GFCF from Trader Joe’s).

    We made the carnitas one night and a day later we made the sandwiches…everyone enjoyed them especially my husband. As a working mom I appreciate how easy, fast, and delicious the meal was. We will do both the carnitas tacos and bbq sandwiches again and again…thanks.
