Amys Gluten Free Pantry

Summer is just around the bend and for my family that means barbecuing. This is a quick recipe that requires few ingredients and a hot grill. Using ready made, gluten-free BBQ sauce makes it a snap and it tastes great alongside fresh corn, sauteed green beans and Celery Root Slaw or traditional Coleslaw.

Prep time: 5 minutes
Total time: 25 minutes
Servings: 4

4 bone-in chicken breasts
1/2 c. bottled, BBQ sauce (Trader Joe’s Kansas City BBQ Sauce is GFCFSF)

  1. Preheat grill to 450 degrees.
  2. Slather half of BBQ sauce onto both sides of chicken and place on hot grill, skin side down for 3 minutes. When the chicken is seared, turn grill down a bit (to 375) and grill for another 7 minutes.
  3. Turn chicken and grill on indirect heat for 8 minutes, (depending on how thick your breasts are), lid down for entire grilling process.
  4. Slather remaining 1/2 c. sauce over chicken and grill for additional 2–3 minutes and serve.
