gluten-free brownie parfait

I don’t know about you, but I’m always looking for ways to make food stretch at my house. At any given time, I have between two (the ones I’ve got), and eight kids at my house. An easy dessert is a brownie parfait. This is so easy, I’m not even including quantities.

Great for the 4th of July, it’ll serve a crowd. If you are toting your food to see fireworks, this works well too, because you don’t have to keep the ice cream frozen.

Happy 4th of July, everyone!

Prep time: 10 minutes
Total time: 50 minutes

gluten-free brownie mix (I love Trader Joe’s GFCF offering)
coconut ice cream, melted, any flavor you like, homemade or store bought
fresh blueberries
fresh strawberries sliced in fourths

  1. Bake brownies according to instructions. Cool.
  2. Into parfait cups or plastic cups for kids, layer berries, coconut ice cream and a sprinkling of  crumbled brownies. Do as many layers as you like, ending with a sprinkling of brownie crumbs.
